Helen's Recipes 03: Granola

Greetings! I am a granola fiend. Love it as a topping on yogurt or eating the large chunks plain. My favourite way to enjoy granola is to fix myself a bowl and pour over some almond milk--just like eating cereal. DELISH! I change my recipe with every batch depending on how I feel but this is the original base recipe.
Ingredients
25 minutes, yields about 4 cups of granola
- 2 cups old fashioned rolled oats
- 3/4 cups roughly chopped nuts (my favourite is almonds + walnuts)
- 1/4 cup quinoa (optional, but it adds the most amazing crunch! edit: uncooked)
- 2 tsp cinnamon
- 1/4 cup melted coconut oil (olive oil is fine too)
- 1/4 cup maple syrup (honey is fine too)
- 1/2 tsp vanilla extract
Directions
- Preheat oven to 350F.
- Line baking sheet with parchment paper.
- Mix the dry ingredients in a bowl, then spread it out on the lined baking sheet.
- Mix together the wet ingredients in a small bowl, then pour over the dry ingredients.
- Using a spatula, throughly mix everything together. Towards the end, I use my spatula to squish the oats into the baking sheet so we can get nice, chunky clumps!
- Baking for 20-25 minutes, keeping an eye on the granola to ensure it doesn't burn.
- Let cool and enjoy!
